The inspiration
The Brussels affiliate is located just steps away from mannequin pis. The affiliate doesn’t have a cafeteria, so Andy and I went for a quick bite.
Andy took me to a quick place around the corner that the affiliate had brought him. Andy went safe. . but I scanned the menu for something new. I found French for hot and ordered some kind of “hot curry sandwich” . . . the fun part. . I had no idea what to expect.
When we got back to the office I leaked a creamy curry sauce all over the table . . but it was worth it. The sandwich was not like anything I’ve had in the states. . .I wonder if the Brussels affiliate knows how to make that superb sandwich.
The sandwich at the affiliate was a kind of meatball sandwich drenched in Curry sauce (and sliced into a baguette of course). . I have only tried to replicate the sauce. . .
Well I took a little French, a little Indian. . .and made a great Chicken sandwich.

Grabers curry sauce - Great on Chicken
1 CUP Crème Fracie
3/4 tablespoon red curry
1/4 tablespoon hot curry (pekense)
1 teaspoon of lemon juice
1 teaspoon of Dijon mustard. . .
The sauce will come out in a milky red-white consistency. . .
The slight bitterness of the crème fracie is overruled by Dijon/curry.
Chicken
salted
peppered
and tossed in red curry
